Tart | Clementine | Plum

The second in a duo-fresh and mixed ferm collaborative release with Burning Sky Brewery (East Sussex). A collaboration to share knowledge and reignite our love of and passion for farmhouse brewing. This spontaneous barrel-aged version from our Fermata Range was first coolshipped before barrel aging in oak foeder for a year. Finally blended with a saison with the addition of grapefruit and peppercorns. Tart with notes of clementine and plum. Farmhouse brewing is nothing without Ferm Friends.

Tropical fruits on the nose with a very light hay funk that leads into dry and light vanilla oak tannins. Medium body and full mouthfeel after 13 months in foeder. This mixed-fermentation Fermata Range beer is from over in our barrel store where we like to things slow. To distinguish from our everyday version it bares the musical notation to show a pause 𝄐

A Honey Beer 2.5 years in the making that truly reflects our landscape. Local honey brings sweet chestnut and orange to a beautifully rounded mixed fermentation beer. A true Lambic Style sour that has evolved slowly in a white American oak Foeder.
